New York Cheesecake

So guys, hard recipes are hard to come back, it's especially hard to replicate those perfectly pictured end result of said recipes, specifically when it's a dessert. But never fear, there's a full proof New York Cheesecake recipe I found that'll really get you in the kitchen, cooking this little beauty. It's worth the cook, the clean, the time and the waiting because the taste is absolutely mouth-watering and to die for! So go on then, get your apron on, get your ingredients, and look at this fool-proof recipe.


NEW YORK CHEESECAKE RECIPE

Ingredients:
- 250g sweet biscuits
- 125g butter, softened
- 500g cream cheese, softened
- 3/4 cup caster sugar
- 3/4 cup sour cream
- 3 eggs
- 2 tablespoons flour
- 1 teaspoon vanilla extract

Method:
1. Preheat oven at 160°C/140°C fan-forced
2. Grease round (base) spring form cake pan with butter or simply place baking paper at the bottom of the cake pan
3. Process biscuits until mixtures resembles fine breadcrumbs. Add butter and then process again until combined. Press this mixture at the base and the side of the cake pan. Allow to chill for 30 minutes in the fridge.
4. Use an electric beater (or the processor used previously) to beat/mix cream cheese, sugar and vanilla until just combined. Beat/mix in the flour. Add eggs, 1 at a time, beating/mixing well until combined. Stir in the sour cream until combined. When mixing the sour cream in, I personally just used the processor to mix it in but obviously at a slow speed just so you don't over mix the mixture or anything.
5. Pour the cheesecake mixture into the cake pan.
6. Bake for 1 hour and 15-30 minutes or until just set in the centre. Be sure to check the cheesecake after the 1 hour and 15 minutes mark, but always use a skewer and put it right in the centre of the cake because that's the most important part to check.
7. Completely turn off the oven once you think the cheesecake is set.
8. Leave the cheesecake in the oven with the door ajar for 2 hours, or until completely cool. This will prevent the cheesecake from cracking.
9. Place it in the fridge for 4 hours to chill. Obviously you can alter this time and allow it chill to your preference.
10. Once chilled, cut it, serve by itself with fresh fruit like berries or dust with cocoa powder or shred chocolate on the top to add a bit of decadence, and eat it, enjoy it with a cup of tea, cup of coffee or whatever you feel like.

Here's the finished product that was baked and eaten by myself using the recipe which worked perfectly, tastes as though it came from a patisserie I kid you not.

This recipe for such a diverse cake can be altered to your liking. Mix in cocoa and chocolate into the cake mixture and use chocolate biscuits for the base. Mix in coffee in the cake mixture and bake coffee biscuits for the base. Mix in berries or your favourite fruits into the cake mixture. There are so many ingredients you can add to change the recipe and make it your own.
